Bakewell tart
Recipe by125g butter
125g caster sugar
1 egg lightly beaten
125g ground almonds
1/2 tsp almond extract
2 tbsp raspberry jam
Icing sugar for dusting
( Pastry )
175g plain flour
90g chilled butter ,cut into cubes
About 2 tbsp cold water
( On the top )
Flaked almonds
Icing and water
Prep. Time → 40 min
Cook Time → 45-50 min
1. Make the pastry : put the flour into a large bowl. Rub in the butter until the mixture resembles fine breadcrumbs.mix in enough water to make a soft ,pliable dough. Wrap in cling film and chill for 30 mins.
2. roll out the pastry on a lightly floured work surface and use to line the flan tin. Reserve the trimmings.
3. melt the butter in a saucepan , stir in the the caster sugar ,and cook for about I minute . Remove from the heat ,leave to cool a little, then gradually stir in the egg, ground almonds ,and almond extract.
4. spread the jam evenly over the bottom of the pastry shell, and pour the almond mixture on top.
5. put flaked almonds on the top
6. bake in a preheated oven at 200'C(180'C fan,gas 6)for 45 mins until the filling is well risen and golden and springs back when lightly pressed with a finger .if the pastry is browning too much cover the tart loosely with foil.
7. remove the tart from the oven . And put the icing on.
