6-8 oz breakfast sausage
4 eggs
4 portobello mushroom caps
1 parsnip
1 shallot
Salt & Pepper

Directions
1. Pre-heat oven to 375. Brown sausage in skillet with parsnips and shallots. While browning, place mushroom caps on an aluminum-foil lined baking sheet. Split meat/veg mix among portobello caps and crack one egg on top of each. Bake in oven for 10-15 minutes or until eggs reach desired doneness.
