Butternut squash soup recipe

1 large butternut squash: peeled, seeded, and diced into 1 inch cubes
2 cloves of garlic minced
2 Tbsp chopped parsley
1 Tbsp extra virgin olive oil
1/4 cup tomato puree
1 1/2 cups shortcut pasta (elbow)
5 cups water
1 olive oil
1 salt and pepper

1. 1. In a soup pot, with olive oil, over medium high heat, add garlic. about a min;

2. 2. Add butternut squash: season squash with salt and pepper.

3. 3.Add water: Add parsley and tomato puree.

4. 4.Put heat back down to medium, and let cool for 45 mins.

5. 5.After 45 mins, put heat back up to medium high- and add shortcut pasta.

6. 6.Season with salt. Let cook 10 mins, till pasta is done.

7. 7.Serve.
