Cauliflower, golden raisin, almond, curry vinaigrette

1 head cauliflower (about 2 lbs) -- cut into florets
1/4 c. olive oil
Coarse salt and freshly ground black pepper
1 c whole almonds, toasted
1/4 c golden raisins
1/2 c Curry Vinaigrette (see separate recipe)

Prep. Time → 15 min

Cook Time → 30 min

1. Pre-heat oven to 400 degrees

2. Put cauliflower in large baking pan
Drizzle with oil
Toss to coat
Spread out in single layer
Season generously with salt and pepper
Roast for 25-30 minutes until tender and slightly charred (shaking the pan occasionally)

3. Put roasted cauliflower in a mixing bowl
Add the almonds and raisins
Toss with Curry Vinaigrette to evenly coat

4. May be served warm, cold or at room temperature
