Chicken enchilada with green sauce

(for the salsa)
2 lbs tomatillos: husked and washed
1 juice of small lime
4 cloves of garlic, peeled
1 onion
1 pepper and salt to taste
4 tsp ground cumin
1 cup fresh cilantro (chopped)

(for the filling:)
2 tsp ground cumin
1 medium chopped onion
3 cloves of garlic
2 cups chicken stock
1/4 cup flour
5 flour tortillas
1 shredded chicken
2 tsp fresh cilantro, chopped
1 shredded Mexican blend cheese

1. 1. Preheat oven to 300*F.

2. 2. To make salsa: take green tomatillos: wash and take paper skins off: peel garlic, and put in bowl with tomatillos: chop onion, and put in bowl:

3. 3. add 4 teaspoons of cumin: a couple teaspoons of salt: a pinch of pepper: add a half of cup of cilantro leaves: then add juice of 1 lime: mix together: pour bowl in baking dish: to 350* oven to 25-30 mins.

4. 4. Put the stuff from the baking dish into blender: blend till turn into green sauce: put in clean bowl: don't wash the baking bowl that we just put in: extra flavor ^^. Put aside:

5. 5. In a skillet pan, put 3 tbsp of olive oil: add in chopped onion: on medium high heat: and add garlic: sauté till onions are soft and brown: 3 to 5 mins: cook time.

6. 6. After 3 to 5 mins, add ground cumin: mix: add flour: mix well: so flour doesn't burn: pour chicken stock: mix: let cook for 10 mins until thick and creamy: season with salt and pepper:

7. 7. Put a scoop of green salsa in mixture: stir to combine: turn heat off: add in shredded chicken in sauce: mix well:

8. 8. Put a few leaves of cilantro: take back baking dish, and spread green salsa on, in baking dish: take flour tortillas, and spread some green salsa sauce in the middle: take some chicken, and put in middle:

9. 9.take some Mexican cheese and pour over chicken on top: roll tortilla like a Roll: put in baking dish: top with green salsa over Enchiladas: sprinkle cheese over the sauce:

10. 10. Put in oven 350* for 25 to 30 mins, till bubbly and golden brown on top:

11. 11. Let cool for 10 mins. Take Enchiladea, and top with sour cream and fresh cilantro.
