Healthy roasted fish recipe

1. • Place the potatoes in water and cook for about 10 minutes. Once the potatoes are cooked, drain the waters and leave aside to dry.

2. • Now put come infused olive oil in the pan and add 2 sprigs of the rosemary, the sage, thyme, garlic, chili, and fennel seeds. Place it on a gentle heat until the garlic turns brown. After that, remove the pan and leave it to cool it down.

3. • Then, take a roasting tray and brush it with some of the infused oil and place the potatoes in a line across the top and then tomatoes slightly overlapping it. Again repeat the same thing until the whole tray is lined with alternating red and white stripes. After that, sprinkle on the diced onion and add 1/2 a teaspoon of salt and black pepper to it. And then Put the tray into the oven (make sure, the temperature is 200c) until the potatoes are starting to brown around the edges.

4. • Now the lemon slices and the remaining 2 sprigs of rosemary inside of the fish and place it and place it on top of the potatoes. Brush the fish some of the infused oil and sprinkle some salt. And then, roast the fish in oven for approximately 20 minutes to serve it finally.
