Homemade minestrone soup recipe

3 tablespoons Olive oil
1/2 onion ( chopped )
2 carrots ( large, chopped, peeled into dice )
2 celery ( stalks, chopped into dice )
1 clove(s) garlic ( minced )
1 package(s) spinach ( fresh, washed and trimmed stems )
1 russet potatoes ( large, peeled and cubed )
1 Canned Diced Tomatoes
3 low sodium chicken broth ( cans )
1 cup pasta ( elbow )
6 basil leaves
1 salt and pepper

1. 1. Wash spinach: trim stems, and put spinach in bowl: chop/ peel carrots into dice, and put in another bowl: chop celery into dice and also put in bowl as carrots:

2. 2. Peel and chop potato and put in bowl: and garlic: chop half of onion: into dice:

3. 3. Put 3 table spoons in soup pot of olive oil: and add vegetables: sauté it with the olive oil.

4. 4. Add chopped tomatoes, and the 3 cans of chicken stock: put lid on, medium high heat for 20 mins: when it comes to a boil, season with salt and pepper:

5. 5. After 20 mins, add pasta and basil: let it cook for 8 mins: Then toss in spinach: let it wilt down, for a min, and let it cook:

6. 6. Lid on, for 5 mins: put in soup bowl.
