Mediterranean Meatball Bowl of Kelly Barton - Recipefy

For the Meatballs

1 large egg
1/4 cup fresh chopped dill
1/4 cup fresh chopped italian parsley
1/4 cup unseasoned panko breadcrumbs
3 garlic cloves (minced)
1 tsp kosher salt
freshly ground black pepper
1 lb 93% lean ground turkey
olive oil spray

For the Bowl

1 1/2 tbsp evo (divided)
1 1/3 cup dry pearl couscous
1 3/4 cup reduced sodium chicken broth
1 cup diced tomato
2 cups persian or english cucumber (diced)
1/4 cup red onion (diced)
1 tbsp italian parsley (freshly chopped)
black olives
1/2 cup yellow pepper (diced)
crumbled feta
2 tbsp fresh lemon juice (from 1/2 lemon)
1/2 tsp kosher salt
Freshly ground black pepper
1/2 cup tzatziki

1. Crack the egg into a med mixing bowl and beat with a fork. Add the herbs, panko, garlic, salt and pepper and mix to combine.

2. Add the turkey with a fork, mix to combine, do not over-mix. Roll into 16 evenly sized meatballs and place on parchment lined sheet pan and set aside until ready to cook.

3. To air fry: cook at 400 for 8-10 mins, turning halfway.

4. To bake: bake on sheet pan 400 for 20 mins.

5. Meanwhile, in a sauce pot over med heat add 1/2 tbsp olive oil and the dry couscous and sauté to toast the grains for about 3 mins. Add the hot broth, bring to a boil, then reduce heat to simmer, cover and cook for about 10 mins stirring occasionaly, or until liquid is absorbed. Add a pinch of salt if needed.

6. While meatballs and couscous are cooking, make the salad. In a small bowl combine the tomato, cucumber, red onion, 3 tbsp parsley, black olives and yellow pepper. In another small bowl whisk lemon juice, 1 tbsp olive oil, shake of salt and pepper to taste and pour over salad.

7. To assemble bowls: Add 3/4 cup each of couscous to 4 bowls. Top with 3/4 cup salad and 4 meatballs. Serve with a dollop of tzatziki.
