6 PORK CHOPS
8oz MUSHROOMS
OLIVE OIL (FOR COOKING)
1 CLOVE GARLIC (CRUSHED)
2 RED AND YELLOW PEPPERS
SALT AND PEPPER
1 TABLESPOON TOMATO PASTE

1. Heat oil in a heavy pan,
Fry garlic until pale brown
Add chops and brown on both sides
Add salt and pepper
Remove from pan and keep warm
Dilute tomato paste with a little water and add to pan
Chop peppers and add to pan with chopped mushrooms
Cover and cook slowly for about 15 minutes
Replace chops cover and cook slowly for about 45 minutes
