"No Spain, No Gain" — Cinco de Mayo Cocktail

Ingredients for 1 person

DRINK:
(Makes 1 drink)
2 chunks pineapple, approximately 1½-in. cubes
1½ oz. reposado tequila
1 oz. guajillo syrup (recipe below)
1 oz. lime juice

GUAJILLO SYRUP:
(Yields 4 cups)
4 c. simple syrup (in a pot, mix four parts sugar to four parts water; boil until sugar dissolves)
3-4 guajillo chiles

  • Level → Easy

1 FOR SYRUP:
Warm simple syrup over medium heat.

2 Break up chiles and add to syrup.

3 Simmer 10 minutes, taste for heat, and let simmer for another 10 minutes if needed.

4 When desired heat level is achieved, strain and refrigerate.

5 FOR DRINK:
Muddle pineapple in cocktail shaker.

6 Add remaining ingredients.

7 Shake over ice.
