Pumpkin soup recipe

1 large onion, chopped
1 Tbsp olive oil
2 stalks of celery, chopped
1 carrot, peeled and chopped
2 tsp ground sage
1 tsp fresh thyme
2 cups pure pumpkin puree
3 cups can of low sodium chicken stock
1/4 cup heavy cream
1 salt and pepper

Prep. Time → 5 min

Cook Time → 25 min

1. 1. In a soup pot over medium high heat, with olive oil, add chopped veggies. season with salt and pepper. cook 5 to 7 mins till color.

2. 2.Add pumpkin puree; and herbs and chicken stock. stir. wait till it comes to a boil, and when it does, put the lid half on, and let cook 20 mins.

3. 3.Puree in blender, till creamy, put back in pot and add heavy cream. season with salt and pepper.

4. 4.Let warm 2 to 3 mins; serve in bowl.
