Santa's Cookies of Joe Julian - Recipefy

5 1/2 oz (by weight) cocoa butter
1/2 cup butter flavored vegetable shortening
1/2 cup granulated sugar
1 1/4 cup packed brown sugar
2 teaspoons vanilla
2 oz espresso
2 large eggs
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
4 teaspoons ground cinnamon

Prep. Time → 10 min

Cook Time → 35 min

1. Preheat oven to 400 degrees F.

2. Mix the shortening and the cocoa butter in a glass dish and heat in a double boiler until melted (I use a pyrex measuring cup in a bowl of water in the microwave).

3. In a large mixing bowl, combine the lipids, brown sugar, 1/4 cup sugar, espresso, and vanilla. Mix until the temperature is under 90 degrees and add the eggs. Mix until light and smooth, about 2 minutes.

4. Sift together the flour, cream of tartar, baking soda and salt, and stir into the egg mixture.

5. In a small bowl, stir together the remaining 1/4 cup sugar with the cinnamon

6. Scoop out 1 slightly rounded tablespoon and shape into about a 1 inch ball and roll in the cinnamon sugar. Arrange on ungreased cookie sheets about 2 inches apart.

7. Bake for 6 to 8 minutes until the edges of the cookies are set but the centers are still soft. Transfer to wire racks for cooling.
