Vegan banana bread

250g vegan butter
1 cup sugar (or ½ cup agave)
4-5 large, ripe bananas, blended
2 ¾ cup flour
1 ½ tsp baking powder
1 ½ tsp baking soda
¼ tsp salt
100 ml vegan unsweetened yoghurt
60 ml soy milk (or almond milk)

1. Set oven to 350 F.

2. Brush baking tray with melted butter; line with baking paper.

3. Sift flour, baking powder, soda, and salt into a bowl. Set aside.

4. Cream butter and sugar until light and creamy.

5. Add the blended bananas and yoghurt; beat until combined.

6. Fold in sifted flours alternatively with milk. Stir until smooth. Spoon into the prepared tray and smooth surface.

7. Bake for 60min or until a skewer comes out clean when inserted into the centre of the cake. Stand cake in tray for 10min before turning out to cool.
