Bara Brith (Welsh Fruitcake)

Ingredientes
285g (10oz) - Mixed Dried Fruit
2x cups - Hot Tea
85g (3oz) - Brown Sugar
1x Lemon, grated rind
1¼ teaspoons - Mixed Spices (Pumpkin Spice, Cinnamon, Nutmeg, and/or Ginger)
1x Egg
340g (12oz) - Self-Rising Flour
- T. Preparacion → 720 min
- T. Cocinado → 45-55 min
- Nivel → Medio
1 Soak Mixed Dried Fruit in the 2 cups of Hot Tea. Cover and let stand overnight.
2 Preheat oven to 175°C (350°F)
3 Strain the Mixed Fruit, saving the liquid. Add Brown Sugar, Lemon Rind, Mixed Spice, Egg and Self-Rising Flour to strained Mixed Fruit.
4 Add the liquid a bit at a time until the batter is of soft, dropping consistency.
5 Pour into a greased brown paper lined 2lb Loaf Pan and bake at 45-55 minutes until firm to the touch.
