200g golden caster sugar
150g self raising flour
1tsp baking powder
1tsp cocoa powder
200g butter (unsalted)
200ml coca cola
2 happy eggs
Ingredients for Cola Frosting
100g butter (unsalted)
200g icing sugar
100ml coca cola
15g cocoa powder
1tsp cola extract

1 Preheat oven to 180oc (gas mark 4)
2 Line a cupcake tray with paper or, idealy, foil liners
3 In a sauce pan heat up the butter and cola until the butter is melted
4 In a large bowl sift the flour, baking powder and the cocoa then add the sugar and mix well.
5 Add the cola mix to the dry ingredients, then the milkand the beaten eggs. Mix till you achieve a nice smooth mixture.
6 Spoon into cases and bake for 25-30mins or until a skewer comes out clean.
7 Leave to cool in the tray for 5mins and turn out on a cooling rack.
8 To make the cola frosting: cream the butter and sift in the cocoa powder.
9 Add the icing sugar alternating with the cola and beat until you get a nice smooth frosting-you might need to add a bit of extra cola if the mixture is too thick.
10 Pipe on top of the cooled cupcake and decorate with fizzy cola bottle sweets and the optional popping candy.
