Oregano and Garlic Roasted Lamb

Ingredientes para 1,2kg leg of lamb
15ml dried oregano
1 head garlic, separated
30ml lemon rind, finely grated
80ml lemon juice
150ml olive oil
salt and freshly ground black pepper
1,2kg leg of lamb
1 kg baby potatoes

1 Place oregano, garlic, lemon rind, lemon juice, 125ml olive oil, salt and pepper into non-metalic bowl and stir to combine.
2 (Place 30ml of oregano mixture into center of leg of lamb and secure with kitchen string. Pour remaining mixture over lamb and place in baking dish. Cover and refrigerate for 2 hours
3 Preheat oven to 180C. Heat large non-stick frying pan over high heat with remaining oil and cook leg of lamb until browned, about 2 min each side.
4 Place potatoes in baking dish and toss to combine. Add lamb and roast until cooked to your liking. About 50-60min for medium
