Beef short rib in stout with harvest veggies

Ingredienti per 4-6 people
15ml oil
1.5kg beef short rib
1 carrot, peeled and chopped
1 parsnip, peeled and chopped
1 butternut, peeled and chopped
1 onion, peeled and chopped
15ml tomato paste
2 garlic cloves, crushed
4 cinnamon sticks
zest and juice of 1 orange
30ml cake flour
salt and freshly ground black pepper, to taste
2x375ml milk stout beer
30ml dark brown sugar
750ml beef stock

1 Heat oil and seal meat in deep ovenproof dish
2 remove meat and set aside
3 in same dish, add carrot, parsnip, butternut and onion
4 cook over medium heat until soft
5 add tomato paste, garlic, cinnamon, orange zest, flour and season
6 add stout, orange juice, sugar and stock, then stir well until sauce forms
7 add meat again and cover and cook on low heat till meat is tender (2-3 hours)
8 Skim fat and thicken sauce with a little extra flour if necessary
