Carrot Curry

Ingredienti

4 large carrots
1 large onion
1 green chilli
150 ml coconut milk
150 ml water
1 tsp chilli powder
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground turmeric
2 tbsp oil
6 curry leaves
Salt pepper to taste
Fresh coriander for garnish

  • Difficoltà → Facile

1 Peel, wash and cut carrots into 3 cm sticks long blocks.

2 Chop onions and a green chilli.

3 In a bown mix sliced carrots, ground cumin, ground coriander, turmeric, salt, pepper and chilli powder.

4 Heat oil in the pan, add chopped onions, chilli and curry leaves and saute until the onions are lightly brown.

5 Add carrot mixture and keep tossing for 5 to 7 minutes.

6 Add coconut milk and water.

7 Bring to boil and simmer under cover until the carrots are tender.

8 Garnish with coriander leaves and serve.
