225g (8oz) Self Raising Flour
1/2 tsp Baking Powder
125g (4oz) Butter or Marg
125g (4oz) Caster Sugar
50g (2oz) Desicated Coconut
1 tbsp Milk
a few drops Vanilla Essence

1 Sieve the flour and baking powder into a bowl.
2 Add the butter to the bowl and rub in.
3 Stir in the caster sugar and coconut.
4 Beat the egg.
5 Add the egg, milk and vanilla essence to the bowl to make a fairly stiff mixture.
6 Place dessert spoonfuls of the mixture on a greased baking tray allowing space for the mixture to spread.
7 Bake in the oven at 220°C (Fan 200°C), 425°F, Gas Mark 7 for 10 minutes until golden brown.
