Lamb Tails (Skaapstertjies)

Ingredienti per 4 people

4 lamb or muttor tails per person
generous springs of fresh rosemary and thyme
4 garlic cloves
water, to cover
finely grated zest of 1 lemon
salt and freshly ground black pepper, to taste

1 Place tails, herbs, garlic and water in a pot

2 bring water to boil and then reduce temperature to a simmer and cook for 2 hours

3 remove tails, discard water, garlic and herbs

4 roast tails in oven proof dish in hot oven till golden brown (about 10min)

5 season to taste and sprinkle with zest.
