1 cup of all purpose flour
1 cup of milk
1/4 cup white sugar

Scones
1/2 cup whole wheat flour
1/2 cup of all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/3 cup of vegetable oil
1 cup culture
*optional: 1/2 cup of raisins and 1 tsp of cinnamon
or 3/4 cup of grated cheese and 1 tsp of fresh, chopped herbs

Preparazione → 1 day + 7 min

Cottura → 12 min

1. Mix culture ingredients with a fork in a small container.

2. Cover and put in fridge for 24 hours.

3. Once culture is ready, preheat oven to 400 F.

4. In a medium-sized bowl mix with a fork the flours, baking powder, baking soda, salt and vegetable oil. Consistency will be moist and crumbly.

5. Add culture and mix with a fork.

6. (Optional: here add some additional flavour, for example, raisins and cinnamon, grated cheese and rosemary or just some of your favorite cheese grated).

7. Rub hands with flour and sprinkle flour onto counter top.

8. Knead dough on counter top until well blended (roughly 10 times). Do not over-knead as this will hinder the scones from rising as well.

9. Flatten dough to about 3/4" thickness.

10. Cookie-cut out scones and place on ungreased cookie sheet. I use a small jar with a 2.5" opening as my cookie cutter.

11. Place cookie sheet in oven and bake for 12 minutes. Depending on the oven, scones may require an additional 2 minutes. Optimal colour is golden brown.

12. While scones are baking, feed the culture with the culture ingredients and amounts.

13. Mix, cover and return culture to fridge.

This recipe is great because once the culture is made you'll always have it in your fridge if you feed it after every use and then it is super quick to mix up the scones on the spot. These scones are delicious with butter and jam or cheese and are a yummy side dish to soups or just an afternoon snack.
