6 pork and spicy chorizo sausages
1 tbsp olive oil
2 garlic cloves
2 tsp ground cumin
2 tsp ground coriander
140g long grain rice
2 stock cubes
850ml hot water
400g chopped tomatoes
1 large carrot
½ small bunch of coriander leaves

1 Peel and slice carrot and onion
2 Open the cans and packets, gather the equipment and crush the garlic. Then make the stock by add the water to the stock cubes.Stir until the stock cubes have dissolved.
3 Split the sausage skins, remove the meat and divide each sausage into 3 meatballs. Each should be about the size of a large marble.
4 In a large saucepan, heat the oil. Fry the meat balls until brown all over.
5 Remove the meatballs from the pan and set aside in a bowl. Add the onion and garlic to the pan and fry until softened.
6 Add the spices and rice. The spices and rice should not stick to the pan.Add the stock and tomatoes very quickly afterwards. Stir and simmer for 10 minutes or until the rice is cooked. Little bubbles should appear around the edges of the pan.The rice is cooked when it is completely soft and not gritty
7 Stir in the meatballs and the salt and pepper. Remove from the heat.
8 Ladle into bowls and season with fresh coriander leaves
