Apple cheddar casserole
Recipe by2 apples (sliced thin)
3/4 cups low-fat cheddar cheese (shredded)
1 egg
2 egg whites
3 tbsps oat bran
1 cup 2% milk
cinnamon (to taste)
salt (to taste)
1 tbsp olive oil
1. Preheat oven to 350°F. Grease an 8×8 baking dish. Place sliced apples in the baking dish in an even layer. Next, evenly layer cheese over apples. Whisk egg whites, milk, cinnamon and salt in a bowl. Gently mix in the olive oil and slowly pour over cheese-apple mixture. Sprinkle the oats on top. Bake for 45 minutes or until knife inserted comes out dry.
2. 340 calories, 21g fat, 24g carbs, 18g protein. This is a 2 and a half block meal, enough for a small female. If you're a big guy, just halve the recipe instead of eating a third of it, that'll put you at about 4 blocks.
