Apple ring cake

7 eating apples
12 fl oz vegetabel oil
1 lb caster sugar
3 eggs
15 oz plain flour
1 tsp ground cinnamon
1 tsp vanilla essence
4 oz chopped walnuts (optional)
6 oz raisins
icing sugar for dusting

Cook Time → 1 1/4 hours min

1. 1. Preheat oven to 350*F/180*C/gas 4. Grease a 9 inch (23 cm) ring mould.

2. 2. Quarter, peel, core and slice the apples into a bowl. Set aside.

3. 3. With an electric mixer, beat the oil and sugar together until blended. Add the eggs and continue beating until mixture is creamy.

4. 4. Sift together the flour, bicarb and cinnamon.

5. 5. Fold the flour mixture into the egg mixture with the vanilla. Stir in the apples, walnuts and raisins.

6. 6. Pour into the tin and bake until the cake springs back when touched. About 1 1/4 hours. Let stand 15 mins. Unmould, dust with icing sugar when cooled.
