Baked fish

2.5-3 lb fish
1/3 cup olive oil
2 tablespoons lemon juice
2 garlic cloves
1.5 teaspoons rosemary (less if dried)
1.5 teaspoons thyme (less if dried)
Salt + Pepper

Cook Time → 20-25 min

1. Combine ingredients (minus fish) and pour over fish.

2. Cover with plastic wrap.

3. Chill for 2-4 hours

4. Preheat oven to 450 degrees.

5. Bake in shallow pan for 20-25 min or until flakes easily.

This recipe comes from "Best of Italy", a book I got for Dad for Fathers Day many years ago after hearing him tell about delicious whole baked fish he had eaten in Italy.
