Basic egg salad

2 hard boiled eggs
2 tablespoons Mayonnaise
1 tablespoon Yellow Mustard
1/4 cup Celery (finely diced)
1 tablespoon Sweet Relish
Pepper

1. I don't have a craving for an egg salad sandwich as often to remember this so I'm capturing it now for future reference. I've made egg salad over the years but finally hit upon a combination that I could use as my "go to" recipe.

2. I boil the eggs shortly before I make the sandwich. I also use the freshest eggs as that seems to make the peeling process easier. A little salt and maybe some vinegar added to the boiling water helps as well.

3. To make the salad, peel two eggs and add them to a bowl. I'm always looking for ways to cut fat from recipes so I only use one of the yolks. The other I give to the dogs.

4. Add mayonnaise, mustard, celery, relish and about 1/4 tsp of pepper.

5. Use a fork to mash the eggs down while combining the ingredients together. Taste and adjust the ingredients if necessary.

6. I toast rather than serve on soft bread. I've found Dave's Killer Bread Cracked Whole Wheat combines well with the egg salad. Cut in two, grab a napkin (or two) and put your feedbag on.
