Beef kebabs with roasted baby marrow hummus of Forbidden - Recipefy

kebabs
45ml olive oil
10ml dried oregano
5ml dried rosemary
5ml dried chilli flakes, optional
2 garlic cloves, crushed
juice of 1 lemon
salt and freshly ground black pepper, to taste
600g rump steak, cubed
8 medium bamboo skewers, soaked

hummus
1 punnet baby marrows, thinly sliced
60ml olive oil
1 x 410g tin chickpeas, rinsed and drained
30ml tahini paste
juice of half a lemon
1 small garlic clove, finely chopped

Prep. Time → 15 min

Cook Time → 40 min

1. combine all ingredients for kebabs in large bowl, cover with plastic wrap and refrigerate for 30min

2. remove meat from fridge and thread into skewers

3. heat large griddle pan and cook to your liking

4. remove from heat and set aside

5. hummus:
place baby marrows on baking tray, drizzle with 15ml olive oil and season well

6. roast in preheated oven 200C for 15-20min

7. place baby marrow, remaining olive oil, chickpeas, tahini, lemon juice and garlic in blender and blitz to form a chunky paste
