Beetroot Pachadi of Kitchen Snippets - Recipefy

Beetroot-1 medium( chopped finely )
Grated coconut-1/2 cup
Small onion-1(optional)
Cumin seeds-1/4 tspn
Green chilli-1
Mustard seeds-1/4 tspn
Thick curd-3/4 cup
Salt

For seasoning

Mustard seeds-1/4 tspn
Curry leaves
Dry red chilli-2
Oil

1. Cook chopped beetroot by adding little water and enough salt.Cook till the beetroot becomes soft.( don't add too much water )

2. Meanwhile ,grind together grated coconut, small onion,mustard seeds,cumin seeds and green chilli to a smooth paste.Add this to the cooked beetroot and mix well.Cover and cook in low flame for another2-3 mints.

3. Switch off the heat and add thick curd .Add more salt if needed and mix well.

4. In another pan heat little oil and splutter mustard seeds.Add dry red chilli and curry leaves.Roast in low flame till they change colour.Pour this into the beetroot pachadi and mix well.
