Boil-up of Michael Teka - Recipefy

A bunch watercress
1 pork tenderloin
1 sweet potato, peeled and diced
1/2 onion
2 sliced carrots
3 spring onions, sliced
1 litre of chicken stock
2 cups of water
1 tsp of sea salt
Pre-made dumplings
1/2 kg of pork bones

Prep. Time → 30 min

Cook Time → 160 min

1. Add the chicken stock, 2 cups of water and pork bones to a large stock pot. Bring to the boil and simmer for 1 hour.

2. Soak the watercress in cold water for about 10 minutes and then wring it out to get rid of the bitter juices. Set aside.

3. Add the sweet potato, 1/2 onion, carrots and spring onions to the soup stock. Simmer for 15 minutes.

4. Cut the pork filet into 1 inch slices and add to the stock. Add salt and lower heat and cover pot. Simmer gently 15 minutes.

5. Add the watercress and stir well. Lower heat and despumate untill cooked.

6. Serve hot with Maori Bread and a strong sweet cup of tea.

you can add your own choice of vegetables to a boil-up. I like to throw in some shredded cabbage and some sausages.
