for the doughnut
2 1/2 cups all purpose flour, plus a bit more if the dough is sticky:
1 envelope of yeast
3 Tbsp granulated sugar
3/4 cup whole milk, warmed up to 115 degrees.
2 Tbsp unsalted butter melted
2 Tbsp vegetable shortening: melted
1 egg
1/2 tsp salt

(for the custard:)
1 cup whole milk
2 1/2 Tbsp all-purpose flour
2 Tbsp granulated sugar
1 egg yolk
1 tsp vanilla extract
1 small pinch of salt

(for the topping:)
4 oz semi sweet chocolate chips
1/3 cup heavy cream
1/4 tsp salt

1. 1.Take your milk, and warm up to 115 degrees. Put in large measuring cup, and add yeast and sugar to it on top: Take spoon, and give it a little stir. Let it sit aside, till it comes foamy on top:

2. 2.When yeast is done, add to your mixer bowl:

3. 3. Add egg to mixer bowl, melted shortening and butter: Whisk:

4. 4.Add dry ingredients in mixer bowl: Add dough hook on, and put mixer bowl on standing mixer:

5. 5.Put on low speed till flour is mixed together: when mixed, turn on to medium speed,and let mix 4 to 5 mins, or until dough is nice and smooth:

6. 6.Take your dough scrapper, and get off dough hook:

7. 7.Take a bowl, and oil it with vegetable oil. Put dough in bowl, oil on both sides: Cover with plastic wrap, and put somewhere warm, (Microwave ^^) and leave it in there till it's double in size: (This can take up to 3 hours) :o

8. 8.In a skillet pot off heat, add your whole milk. And egg yolk: Add your sugar, salt, and flour. And vanilla extract: Whisk it, and put on stove 3 to 4 mins, or until it comes thick:

9. 9.Put custard in bowl, and put plastic wrap on it. Make sure the plastic wrap is covering/ touching the custard: Put in fridge to cool complelty:

10. 10.When dough is risen, take a baking sheet lined with parchment paper: And floured really well:

11. 11.Put some flour on table, take out dough, and put on table: knead it for a min: Make it a medium size circle with rolling pin, and make it a half an inch thick: And nice and even.

12. 12.Take your biscuit cutter, and cut them out. And put them on parchment paper: Cover sheet AGAIN, using plastic wrap, and let it rise till doubled in size:

13. 13.Take a big pot, and fill halfway with vegetable oil: You want it really nice and hot: (Tip from laura: Take a wooden spoon, put it in the middle, if you see bubles, you know it's done.)

14. 14.Take one at a time, and try to shake off flour from underneath doughnut as much as you can:

15. 15.Let them cook a min on each side: Till beautiful golden brown: When done, take a baking sheet and put on paper towel on it: To asurb oil: When done, let them cool off. (Like 10 mins.)

16. 16.Take your sauce pan, and let heavy cream come to a boil: Also put your custard in a piping bag:

17. 17.Take a tooth pick,and make a small hole in doughnut:

18. 18.When heavy cream is done, pour over semi-sweet chocolate chips in a measuring cup and set aside.

19. 19.When every doughnut has hole, whisk the heavy cream cup till dark color:

20. 20.Pour that mixture in a bowl: (for dipping)

21. 21.Take your custard piping bag, and DONT OVERFILL!! Fill doughnuts:

22. 22.Take doughtnut, and dip the tops: Place them on a cooling rack: chocolate should set.
