Breaded baked eggplant

1 Large eggplant or a few smaller ones
1/4 cup mayonnaise
1/4 cup miso
1 Tbs sugar
1 tsp toasted sesame oil
1/2 cup panko crumbs

Prep. Time → 5 min

Cook Time → 30 min

1. 1. Slice eggplant into 3/4 inch slices - or just half smaller ones lengthwise.

2. 2. Mix all the other ingredients except panko together and spread on the eggplant thickly.

3. 3. Cover with panko.

4. 4. Put on a cookie sheet and bake for 1/2 hour at 350F.

5. 5. Great hot or room temperature.
