Cabbage stew

1 cup dried beans
1 Tbsp coconut oil
1 Tbsp minced ginger
1/2 head of green cabbage cut in thin strips
2 stalks celery, chopped
2 medium sized potatoes or 1 large sweet potato diced (or even both)
1/2 cup frozen peas
1/2 cup frozen green beans
1/2 cup frozen corn kernels
(any other veggies you may like)
1/2 tsp hing
1/2 tsp ground fennel
1/2 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
1 bay leaf
2 tsp italian seasoning
16 oz can crushed tomatoes or 2 cups tomato sauce
1 tbsp Braggs Liquid Aminos
1/4 tsp ground black pepper
1 -2 tsp dried parsley
6 cups water
1/3 cup rice (white or brown)

Prep. Time → 60 min

Cook Time → 30 min

1. Heat beans in medium saucepan to a boil, then lower temp slightly and cook until tender and starting to split. Stirring occasionally. Remove from heat.

2. While beans cook you can prep the veggies.

3. In large saucepan, heat oil. When warm add the ginger. Then all other spices and tomato sauce. Then the potatoes and other fresh veggies except cabbage. Fry for a few minutes.

4. Add water and rice. Heat to boiling then lower heat to medium. Add the frozen veggies along with cabbage and cook for approximately 15 minutes.

5. Then serve. You may like extra salt with it and even cayenne if needing a little kick.
