2 boneless skinless chicken breasts (pounded out for even thickness)
1 large egg beaten with a tsp of water
seasoned bread crumbs
1 large avocado, sliced
1/2 cup chopped tomato
1/2 cup chopped red or yellow pepper
fresh grated mozzarella
1. Place egg in a shallow bowl. Place bread crumbs and some garlic powder in a shallow bowl. Dip chicken breast in egg and then press both sides into the bread crumbs. Arrange chicken on a parchment paper lined sheet pan. Cook uncovered, in 350F oven for about 50 mins until longer pick inside.
2. Top each breast with the remaining ingredients in the order given. Broil about 4 inches from heat in the oven for 2 to 3 mins until cheese is melted and golden.
