Calzone stuffed with Spinach and Smoked Mozzarella of Forbidden - Recipefy

dough
120g (1 cup) cake flour
20g (2 tbsp) butter
15ml (1tbsp) honey
5g instant yeast
200ml warm milk

spinach
45ml (3tbsp) olive oil
300g baby spinach, chopped
2 garlic cloves, finely chopped
salt and freshly ground black pepper, to taste

150g smoked mozzarella, coarsely grated

Prep. Time → 30 min

Cook Time → 10 min

1. dough:
place all ingredients except for milk in bowl of electric mixer, use dough hook to mix until combined, slowly add milk until dough is formed

2. place dough into bowl and cover and leave in warm place until it doubles in size (about 2 hours)

3. Spinach:
heat oil in frying pan and add spinach and garlic and season

4. toss until spinach has wilte, remove and set aside

5. divide dough into 4 x 70g balls an cover

6. working on lightly floured surface roll each ball into circle

7. spoon 1/4 of spinach mixture into 1 side of circle, add 1/4 of mozzarella

8. with a brush wet around sides of circle and fold circle into halfmoon form and press down with fork to secure

9. leave in fridge for about an hour

10. heat flat frying pan and cook calzone until golden brown

11. serve hot
