--- Sauce
Mozzarella Cheese (400 grams)
Fresh ripe tomatoes (400 grams)
Onions (1 onion)
Basil (1 tbsp)
Extra virgin olive oil (2 tbsp)
Salt to taste
Pepper to taste

--- Pasta or Gnocchi
Penne (one box or less)
Gnocchi

Prep. Time → 20 min

1. It is advisable to prepare this dish a couple of hours before serving and stirring from time to time to allow the pasta to absorb the sauce in the olive oil and add a couple of tomatoes.

2. If you are using the sauce to season pasta or gnocchi, prepare a little sauce.
Sauté the onion,
then add a couple of tomatoes, basil and salt and pepper to taste.
Cook for about ten minutes. After draining the pasta stir the sauce in well.

3. Cut the Mozzarella cheese into small cubes.
Cut the tomatoes into small pieces and dice the basil.
Season the pasta with the cheese, tomatoes, basil, salt and pepper.

Pino Bianco is a 12/13° white wine to be served at 8 to 10°C
