Carbonade alla flamande
1. Carbonade alla Flamande
2. Ingredients: serves 4-6 person (amount can be adjusted according to the number you are catering for)
3. 1 kilo shin of beef or stewing beef
1 tbsp paprika
1 sprig of thyme
2 laurel leaves
salt and pepper
1 slice of bread without crust spread with Dijon mustard
1 litre of brown beer
4. Cut the meat into cubes and brown in olive oil or vegetable oil. Put aside.
Chop the onions and fry them in the same pan as the meat.
A heavy casserole dish would be best.
When the onions are soft and transparent, put the meat back in the pan including all the juices that they may have produced.
Cover with the beer then add the paprika, thyme, laurel leaves salt and pepper. Put in the oven 180°C for 2 ½ hours Half an hour before end of cooking time add the slice of bread .
5. Serve with boiled potatoes or boiled rice
