2 cups all-purpose flour
1 cup granulated sugar
1/2 cup brown sugar
1/2 cup unsweetened apple sauce
1/2 cup vegetable oil
5 carrots, shredded
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp pumpkin pie spice
4 eggs
1 tsp vanilla extract

(for the frosting:)
6 oz cream cheese, softened at room temp
3 Tbsp unsalted butter, softened at room temp.
2 tsp vanilla extract
1 zest of half of an orange
2 1/4 cups confectioner sugar

Prep. Time → 10 min

Cook Time → 25 min

1. 1. Preheat the oven 350*. spray a 15x10x1 inch baking pan with non stick cooking spray, and lay the bottom with some parchment paper, set aside.

2. 2.In the bowl with the flour, add the pumpkin pie spice, salt, baking soda, baking powder, mix together.

3. 3. In the bowl with the shredded carrots, take some of the flour mixture, coat the carrots: mix.

4. 4.In a another bowl, add both kinds of sugar, eggs, apple sauce, vegetable oil, vanilla extract; use a hand mixer, and mix to combine.

5. 5. Pour batter in flour bowl. Mix to combine.

6. 6.Add in shredded carrots, and fold in with spatula.

7. 7.Pour batter onto baking sheet, spread to make even. Put in oven 25 mins, let cool for a couple of hours.

8. (for topping:)

9. 1. In a bowl, add cream cheese, butter, vanilla extract, zest of orange, mix together. Add sugar, and mix. Pour frosting over cake, put in fridge and set for 10 mins
