Carrot cake with cream cheese frosting recipe

1 1/4 cups flour
1 Tbsp flour
1/2 cup Splenda sugar
1 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
3/4 cup vegetable oil
2 eggs
1 tsp vanilla extract
1 tsp grated orange zest
1 1/2 cups shredded carrot
1/2 cup raisins
1 nutmeg

(for the frosting:)
3 oz cream cheese at room temp.
1/4 cup of butter at room temp.
2 cups confectioner sugar
1 Tbsp water
1 tsp vanilla extract
1/4 tsp cinnamon

1. 1. In a rectangle dish, spray with non stick cooking spray: Add with parchment paper:

2. 2. In a bowl, put shredded carrots in bowl. Add raisins too: Add tsp of flour: mix together: set aside.

3. 3.In a another bowl, add sugar- orange zest, vegetable oil, eggs, vanilla extract: mix together: add flour, baking soda, salt, and spices: mix again:

4. 4. Add in carrots and raisins: mix again: put in baking dish. Put in oven for 30 mins, at 350*.

6. 6. In a bowl with sugar, add butter and cream cheese: (very soft) and vanilla extract, cinnamon: mix: add tsp of water if thick:

7. 7.add and frost on top of cake.
