Carrot Cake of Lori McAleer - Recipefy

Cake
2 cups all purpose flour
2 cups sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
2 cups finely shredded carrots
1 cup cooking oil
4 eggs

Icing

2 x 3 oz. package cream cheese (softened)
1/2 cup butter (softened)
2 tsp. vanilla
4 1/2 cups icing sugar

1. Cake:

2. Grease and lightly flour two 9 1/2 inch round baking pans or one 13 x 9 1/2 inch baking pan; set aside

3. In a large mixing bowl combine flour, sugar, baking powder, baking soda and cinnamon

4. Add carrots, oil and eggs

5. Beat with an electric mixer till combined

6. Pour batter into prepared pan(s)

7. Bake in 350 degree oven for 30-35 minutes for round pans or 35-40 minutes for 13x9 inch pan or till a toothpick comes out clean

8. Cool layer cake(s) on wire racks for 10 minutes

9. Remove from pan(s)

10. Cool thoroughly on wire racks

11. Frost with cream cheese icing (icing directions found below)

12. Icing:

13. Beat together cream cheese, butter, vanilla, until fluffy

14. Gradually add 2 cups icing sugar, beating well

15. Gradually beat additional 2 1/2 cups icing sugar to reach spreading consistency
