Cuban black beans and rice

2 cups white rice, cooked
1 large can black beans (32 oz)
8 strips of bacon (regular cut)
1/4 cup diced onion
1 tbsp cooking oil

Prep. Time → 5 min

Cook Time → 20 min

1. Heat the oil in a large skillet over medium-high heat.
Cook the bacon in the oil until crispy, about 5 min.
Add the onion and cook until softened, about 3 min.
Pour in the entire can of black beans along with the liquid (do not drain).
Simmer for about 5 minutes.
Add the white rice, stir to combine, and cook until heated throughout.
