Easy (healthier than average) Chicken Carbonara of Shannon R CT - Recipefy

1 box of spaghetti
4 slices of bacon cut into 1/2 inch pieces
1 medium onion, chopped (1/2 c)
1 clove of garlic, finely chopped
2-3 chicken breasts, cut into pieces (number of pieces depends on the size of the breasts)
1/2 c grated parmesean cheese
1/2 c whipping cream
pepper to taste
1/2 c frozen peas (optional)

Prep. Time → 30-45 min

Cook Time → 10-15 min

1. Cook spaghetti as directed.

2. If chicken is not pre-cooked, quickly saute chicken in a large saucepan until pieces are cooked through.

3. Remove chicken from the saucepan and cook bacon over low heat for 8-10 minutes, stirring frequently, until crisp.

4. Remove bacon from the pan with a slotted spoon and drain the fat from the pan reserving 1 tsp. in the pan. (The original recipe uses much more bacon, I've found that I often do not need to drain the fat as there is not much in the pan)

5. Cook onion and garlic in bacon fat over medium heat until onion is tender.

6. Stir in cheese, whipping cream, and peas, and add pepper to taste. Cook, stirring occaisionally until peas are heated through and cheese is melted. Add chicken to warm and toss with bacon.

7. Serve over spaghetti and enjoy!

8. -Can be great as a left-over when you quickly make more sauce with whipping cream and cheese.
