Enchilada Casserole of Michelle - Recipefy

1 pound ground beef
1 cup chopped onion
1 tablespoon butter
1 tablespoon minced garlic
1 1/2 tablespoons all-purpose flour
1 cup beef broth
1 tablespoon taco mix (from a packet)
1 (8 ounce) can tomato sauce
4 (8-inch) whole wheat tortillas (feel free to sub in white if you prefer)
1/3 cup shredded Monterey Jack Cheese

1. Heat a large skillet over medium-high heat and add the beef and onion.

2. Cook and stir for about 6 minutes or until the beef is done and the onions are tender.

3. Preheat the oven to 400 degrees.

4. Melt the butter in a medium saucepan over medium high heat, add the garlic and saute for about a minute.

5. Sprinkle with the flour and stir constantly for about 30 seconds.

6. Add the broth, taco seasoning, and tomato sauce to the pan.

7. Bring to a boil and cook for about 2 minutes, stirring occasionally.

8. Scoop out 1/2 cup of the tomato mixture and set aside.

9. Pour the remaining tomato mixture in with the ground beef and stir well to combine.

10. Place one of the four tortillas in the bottom of a 9 inch pie plate.

11. Top with about one third of the beef mixture.

12. Place another tortilla on top and top with the second third of the beef mixture.

13. Add the third tortilla and top with the remaining beef mixture.

14. Place the last tortilla on top and cover with the 1/2 cup of reserved sauce that was set aside.

15. Sprinkle with cheese and bake for about 10 minutes or until the cheese melts.
