2 ripe avocados
2 vine tomatoes peeled and finely chopped
2 spring onions finely chopped
1-2 fresh chilli finely chopped (depending on heat desired)
Juice from 1 small lime
1tbsp fresh corriander chopped
Pinch of coarse sea salt and pepper to season
Prep. Time → 10 min
Cook Time → 0 min
1. Fork through avocados in bowl until squished, but not pulp.
2. Add all other ingredients and fork through to mix. Taste to season.
3. Excellent served with classic nachos and melted cheese or chicken fajitas.
