Flour free crepes

2 eggs
3/4 cup milk
6 tbsp arrowroot powder
1 tsp baking powder
dash of salt
1 tbsp extra virgin olive oil

1. In a bowl, beat eggs for about 2 minutes with an electric mixer on medium until the eggs are fluffy and pale yellow. Add in milk, arrowroot powder, baking powder, salt, olive oil and continue to mix until blended. (If you over blend, the mixture will be frothy and not cook will; allow mixture to settle until bubbles are gone).

2. Coat 8-12" skillet with cooking spray and warm over med-low heat. Add 2 tbsp of mixture to hot skillet and swirl to evenly coat the bottom. Cook until lightly browned (should take seconds if the pan is hot enough). Carefully flip the crepe with a spatula and repeat on the second side.
