Golden roasted potatoes recipe

1 1/2 lbs small potatoes, scrubbed well
1 Tbsp olive oil
3 Tbsp unsalted butter
4 sage leaves/thyme
2 springs of fresh rosemary
10 cloves of garlic, unpeeled
1 salt and pepper

1. 1. Preheat oven to 425*

2. 2.Fill a large pot with water, place the potatoes in cold water: bring to a boil: and add a good pinch salt; boil them for 10 mins, drain very well.

3. 3.In a baking dish, add butter, and olive oil. Put in oven till butter is melted, and pan is hot.

4. 4.Drizzle butter and olive oil over drained potatoes; in pot. Add in herbs and garlic; add in salt and pepper.

5. 5.Pour on baking dish: Put in oven 15 mins: Take out, and take a fork, and press down a little:

6. 6.Put back in oven for another 15 mins.
