Greek Burgers of Calvin Atkinson - Recipefy

500g beef mince
1 onion finley chopped
5 cloves of garlic crushed or finley chopped
1 tbsp oregano
zest of 1 lemon
Grated Kefalotyri or pecorino
1 egg
sea salt
ground pepper
ciabatta rolls

for Tzatziki
Half a Cucumber 

200g Greek Yoghurt 

1 Clove of Garlic 

1 tsp dried mint

Juice of Half a Lemon 

A few sprig of Dill 

Greek Extra Virgin Olive Oil

Lemon wedges to serve

Prep. Time → 70 including chilling min

Cook Time → 10 min

1. Start by making your burger patties

2. Simply place the beef mince in a bowl and add the onion, garlic, oregano, lemon zest, kefalotyri/pecorino and egg

3. Using you’re hands mix all the ingredients together well to allow all the flavours to combine and the egg to bind the meat together

Still using youre hands form into 4 burger patties and place on a tray

4. Put the tray with the patties in the fridge for at least an hour or if you’re in a hurry the freezer for 30 minutes to allow them to firm up

5. Meanwhile make the tzatziki by grating your cucumber over a sieve into a bowl

6. Add a pinch of salt to the grated cucumber and squeeze out the excess water into the bowl

7. Place the cucumber into a new bowl and add yoghurt and mix well

8. Finely chop the Garlic and add to the cucumber and yoghurt mix

9. Add the dried mint and lemon juice to the yoghurt and mix in well

10. Roughly chop a few sprigs of dill and add into the yoghurt and mix well

11. Add a few splashes of extra virgin olive oil and fold into the yoghurt to complete the Tzatziki. Chill in the fridge until needed

12. Place a pan on a medium-high heat and pre heat an oven to 100°c

13. Halve the ciabatta rolls and place in the oven to warm up and be able to take the burgers

14. Meanwile take your patties out of the fridge and place in pan with a lug of olive oil

Fry for 4-5 minutes each side until cooked through then take of the heat

15. Take the buns out of the oven and place the bottom halves on a wooden chopping board or individual plates

16. Put the burgers on top of the ciabatta halves and add a good dollop of tzatziki on top of that then place on the top halves of the ciabatta and serve with a salad
