Green eggs and ham

6 large eggs
3 tablespoons water (or milk)
1/3 cup pesto
Salt and Pepper to taste
1 tablespoon olive oil
1 cup thick-cut ham steak, chopped
2 tablespoons butter, divided
1/2 cup Parmesan cheese, shredded

Prep. Time → 10 min

Cook Time → 8 min

1. Break eggs into medium bowl and add water (or milk) and season to taste. Whisk until eggs are well broken and combined. Stir in pesto until combined.

2. In a large nonstick skillet, heat olive oil over medium-high heat. Add chopped ham and saute until golden brown. Use a slotted spoon to remove ham from skillet and set aside.

3. Reduce heat to medium and add butter to skillet to melt. Pour egg mixture into the skillet. Use a wooden spatula around the edge of the skillet, pulling the eggs to the center. As the scramble begins to collect in the center of the skillet, but are still runny, add chopped ham and Parmesan cheese. Continue turning under the undercooked scramble over in the skillet. Remove from heat when your level of done-ness is reached.
