2 1/4 Tbsp active dry yeast
1 1/2 cups warm water, 115*
2 Tbsp granulated sugar
1 tsp granulated sugar
3 1/2 cups bread flour
2 tsp salt

(for the water bath:)
12 cups water
1/3 cup honey
1 egg wash: 1 egg white beaten with water

1. 1. In the warm water, add the yeast and sugar. Sit aside till foamy.

2. 2. Add bread flour, salt&sugar to standing mixer. Add yeast in mixer.

3. 3.Mix for 8 mins. Oil a bowl with vegetable oil.

4. 4.put dough in bowl: brush the top with vegetable oil, cover with plastic wrap. Let rise for an hour.

5. 5.In a large pot, add water and honey: and bring to a boil. Preheat oven to 425*. Place racks upper 2/3 racks. Take a baking sheet with parchment paper.

6. 6.Take dough, and shape it into a log: take a knife, and cut 8 pillows.

7. 7.on a clean surface, no flour: take dough and cup in hand. And roll and roll. the pinky and thumb dont move, so it keeps it's shape. Put on baking sheet.

8. 8.take your two index fingers, take one finger, and poke into center to make a hole. And take other finger to stretch it, count 15 secs.

9. 9.put dough in water mixture. Top side up. Cook for 1 min on each side, and put back on baking sheet.

10. 10 take egg wash, and brush the tops. Add sesame seeds.

11. 11.Put in oven 20 mins. Roate halfway through. Let cool on wired rack.
