Homemade chicken stock recipe

5 lbs whole chicken, washed and patted dry
1 small drizzle of olive oil
20 cups water
1 large yellow onion, unpeeled and cut into quarters
2 stalks of celery, cut in half
4 cloves of garlic: unpeeled
1/2 tsp peppercorns
1 pinch of salt

1. 1. In a big pot, add a tsp of olive oil: Make sure it's nice and hot.

2. 2. Add chicken right in: Let it develop some color:

3. 3.Add water, a good pinch of salt: Peppercorns, onions, garlic, celery

4. 4.Simmer on low heat, covered 4 and a half hours.

5. 5.When done, take out chicken and veggies

6. 6.Let pot cool off: Cover it, and put in fridge over-night. Then you can skim off fat.

7. 7.Put in freezer in containers.
