Hungarian mushroom barley soup

2-3 onions diced
3 tbsp. butter
1 tbsp. olive oil
1/2 cup barley
1/2 cup sherry (do not omit because it really makes a difference)
pepper
2 tsp. fresh ro tsp. dill
2 tsp. paprika
2 tsp. salt
12 cups mushrooms, sliced
8 cups vegetable stock
4 bay leaves
1/2 cup parsley
1 tbsp. soy sauce
1 cup whipping cream

1. Heat oil and butter in a large soup pot.

2. Add the onions and saute until translucent.

3. Add mushrooms and saute another 10-15 minutes.

4. Add the barley and spices and continue to saute another 10 minutes.

5. Add the stock and allow to cook over medium heat approx 30 minutes or until barley is soft.

6. Add soy sauce, cream, dill and parsley.

Add a splash of sherry. This is a must..................!!!!

Serve with crusty bread and salad.
